To make this tapenade, we have selected Tanche black olives, an emblematic variety of the Baronnies Provençales. Harvested at full maturity, these olives present an incomparable sweetness in the mouth and a taste of ripe olive.They are also from organic farming.In this recipe, the olives are worked simply with capers, a drizzle of olive oil and a hint of garlic and thyme. Without anchovies, this 100% vegetable tapenade can be enjoyed with vegetables or croutons as an aperitif and even bring a Provençal touch to your dishes!
