Inspired by piperade, the traditionally spicy local ratatouille, this soup combines vegetables and fish for a delicious, healthy and balanced meal. Its beautiful reddish-orange hues reveal generous chunks of flaked tuna, melting diced zucchini, tiny bits of sun-dried tomato, as well as thin strips of red bell pepper with a deliciously fruity taste. Its subtly spicy aroma exudes notes of spices and aromatic herbs. This regional recipe is a real treat, or besta, as we say in Basque!
Delicious and complete, this vegetable and fish soup is also low in calories, fat and salt: all major advantages from a nutritional point of view. For lunch or dinner, it's a tasty, healthy and light meal.
Usage tips: shake well before opening, reheat without boiling, and serve. Simply eat it with a slice of bread, or add croutons if you wish. For added authenticity, customise your croutons by rubbing garlic on them, then add a thin slice of Basque cheese and a pinch of Espelette chilli. Bake your new basquaise croutons in the oven until they are golden brown and serve them alongside our soup. Sliced mild chorizo.
