One of la belle-iloise’s classics, this was the first soup that the Cannery produced, more than 60 years ago!This canned fish soup has a unique flavour, characterised by its ocean freshness, its light texture, and its subtly spicy finish. The rich flavours of the fish, such as conger eel and gurnard, are enhanced by a secret blend of herbs and spices.
Easy to prepare and equally welcome in the summer or winter, this traditional fish soup is made for sharing, and makes a great crowd pleaser. At the first spoonful, its beautiful orangey-coral colour is accompanied by delicious tempting aromas. It can be served with croutons, spicy rouille, crème fraîche and grated cheese, or enjoyed as it is, but remember to dilute it, as indicated on the can!
Usage tips: for optimal tasting, remember to dilute it by adding the equivalent of 2/3 of a box of water. Heat without boiling, and serve! Enjoy it plain or with croutons, grated cheese, cream or rouille... It can also be used as a sauce for shellfish or fish dishes.
Topping ideas: add a generous tablespoon of Skyr yoghurt for creaminess, sprinkle with croutons and roasted sunflower seeds for crunchiness.
