Then follows a play on words between "grace" and "fat" in reference to one of the particularities of this rustic breed. Its intramuscular fat of such a singular whiteness gives it all this power and this assertive character.
Through this natural recipe, all the power of this rustic breed is expressed wonderfully. Behind a deliberately coarsely chopped stuffing, we find chewiness, consistency under the tooth revealing to perfection its very singular character.
